Limoncello Superfood Protein Bombs

  • 3 cups almond meal
  • 1/2 cup shredded coconut
  • 1/2 cup solidified coconut oil. (If the oil is liquid, it will still work, but you just need to solidify the balls in the fridge once rolled.)
  • 6 pitted medjool dates
  • Rind of 2 lemons
  • 3 tbsp Peak Nutritionals Velvet Vanilla WPI Protein
  • 1/2 cup chia seeds, soaked in 1/2 cup water

Method:

Throw all ingredients in a food processor, then roll into balls. You may need to add a little water to help keep it bound. Then roll, and cover in desiccated coconut. Keep in the fridge and let it set. Eat straight from the fridge because coconut oil solidifies when it’s cold and becomes an oil when it’s hot.

Have with a cup of peppermint tea or a Peak Protein shake!
